Eggplant Lasagna

3 Eggplants sautéd to a soft consistency
12 oz Cottage Cheese
8 oz  Cheddar Cheese, grated
1 recipe Tomato Sauce

Start with about 1/4 cup of tomato sauce in bottom of casserole dis.  Layer as follows:
1/2 of eggplant, 1/2 of cheese, 1/2 of cottage cheese, 1/2 of remaining tomato sauce.
Repeat layers.  Top with a little grated cheese.  Bake 350 degrees for 30 — 45 minuets.  Don’t burn the cheese on top.

Tomato Sauce

24 cups of quartered tomatoes
1 onion
1 pepper
2 cloves of garlic
3 stems fresh Rosemary
2 stems of fresh Basil
1 stem of fresh Oregano

Puree the tomatoes and cook down to a sauce consistency.  Sauté onion, pepper and garlic. Add sauté mix to tomato sauce.  Chop herbs and add to Sauce.  Cook another 5-10 minuets to meld the flavors together.
